My dad taught me to hunt mushrooms and I've been foraging for mushrooms ever since. Chanterelles, hedgehog, oyster, lobster, cauliflower and boletes are most common where I am, and the main mushrooms that I pick. I am not confident in picking pine mushrooms, though I know they grow here and morels are much less common on Vancouver island and I've only found a few.
I have a couple of great mushroom knives. I love this Opinel mushroom knife with a brush and they have a super cool camp kitchen set with everything you need to prepare a meal in the forest. Chanterelle Mushrooms
Fresh cantharellus cibarius mushrooms are such a treat and chanterelles are some of my favorites and easy to forage for. This chanterelle mushroom risotto is my favorite recipe to enjoy them, other than simply pan fried with butter and garlic. Morel Mushrooms
Got morel mushrooms? Simple sautéed morel mushrooms are a tasty treat and this creamy morel mushroom pasta makes a delicious dinner. Morchella are a wild food delicacy that command a high price. They are well worth it, but it makes it all the more exciting if you've found your own.
Lobster Mushrooms
I love getting bright red-orange lobster mushrooms. Big and meaty, they are one of my favorite mushrooms. Also try hypomyces lactifluorum in these delicious lobster mushroom rolls, a riff on an East Coast lobster roll that's so fun!
Boletes + Porcini Mushrooms
Bolete mushrooms aka porcini are meaty and rich. Try them in this great French dish, a cheesy mushroom bake called bolete julienne. Boletus edulis are known by many names including porcini, cep, penny buns, and there are many other names for the hundreds of species within the genus. (While most are edible, there are some that are not so be sure of your mushroom identification when foraging.)
Cauliflower Mushrooms
Sparassis crispa is an apt name for this tasty mushroom that retains a great texture and firmness after cooking. Because they stay so lovely and firm after cooking, they can be used in almost any of the other wild mushroom recipes here.
Cauliflower mushrooms are deliciously fragrant and can be torn in large pieces and sautéed and used to top thin slices of toast. Top with a little cheese and broil if you like.
Lions Mane Mushroom
This soft and shaggy mushroom is known by many names. It's Latin name is Hericium erinaceus but it's also known as yamabushitake (mountain priest mushroom), bearded tooth fungus, and bearded hedgehog. It feels delicate but cooks up well with a less dense texture than many other mushrooms. Try it fried over gently heat until it starts to brown, then season with a pinch of salt, or try the tasty mushroom 'crab' cakes below.
Saffron Milk Caps
Despite it's name, lactarius deliciosus is not known as one of the tastiest mushrooms but is enjoyed by many, especially in Europe. Many recipes include lots of olive oil, garlic and lemon juice.
Shitake Mushrooms
More commonly bought at the store than foraged, lentinula edodes is one of the more easily cultivated wild mushrooms. Shitake mushrooms are very earthy tasting, with slightly sweet, nutty and almost smoky flavors. These are versatile and very popular mushrooms in Asia and around the world.
Maitake aka Hen Of The Woods
Grifola frondosa resemble oyster mushrooms from the top or side, but are polypores so the underside is a more even texture. That is different from the underside of oyster mushrooms which have gills. They are often found near oak trees and are considered a delicacy.
Oyster Mushrooms
Another wild mushroom that is easy to cultivate, you can buy these at many grocery stores and farm markets. Delicate feeling clusters pull apart like string cheese and hold up really well to cooking. There are many different types of oyster mushrooms from blue to pink to king oyster mushrooms. They can all be used in these recipes. If you want to make vegan 'scallops', you'll want the stems of the king oyster mushroom.
Enoki Mushrooms
Enoki mushrooms grow wild but most of us know them from Asian markets. If picking them yourself, be extra careful about identifying as they have some toxic look-alikes. Flammulina filiformis are very tender and lovely in soups, broth, on their own or in these tiny beef roll ups.
Truffle Mushrooms
Possibly the hardest to forage on your own, most successful mushroom hunters have a trained dog or pig to help sniff them out of the ground. If you find some (in the wild or in a market) you are lucky! Enjoy them shaved over eggs, pasta, soup or risotto. (Here is a French classic, truffle scrambled eggs.)

Mushroom soup is a classic but these are miles better than the old canned classic. Try the elevated traditional style or pick a totally different wild mushroom soup. Here's some great ideas on what to serve with mushroom soup, too.
