With the flavors of loaded baked potatoes, this loaded cheesy chicken broccoli and potato casserole is a dinner the whole family will love. It's quick to make with just one bowl and one casserole dish for easy cleanup and can be made ahead. It's perfect for busy weeknight meals, potlucks and meal train gifts. This cheesy chicken bake is a complete meal on it's own, or serve it with fresh bread and a salad to dress it up.

Why I love this recipe
I love this recipe because it only takes 15 minutes of hands-on prep time. Plus the combination of ranch seasoning with tender potatoes, chicken and broccoli with creamy sauce is sooo good. It's comfort food perfect for family movie night on chilly nights and super easy to bring to a potluck, too.

Recipe Ingredients
You know I love a recipe with simple ingredients. This recipe uses basic pantry and fridge staples that will get your family eating up their broccoli and asking for more! Tender chicken and a cheesy sour cream mixture add extra protein and tons of flavor for a hearty dish that everyone will love. (My kid-friendly GF broccoli cheese soup is another great way to get them to eat their broccoli, too!)

- Broccoli - Did you know that broccoli is tastiest in the cold months? It grows well all summer but once the cool weather hits, broccoli tends to get sweeter, just like it's cousins kale, cabbage and Brussels sprouts! Enjoy this warm casserole with tasty fall and winter broccoli!
- Chicken - Boneless skinless chicken breasts or chicken thighs work equally well in this recipe. It's just a matter of personal preference. Thighs tend to have higher levels of zinc and other nutrients and often cost less. Breasts are slightly lower in fat but can dry out easier (not a problem in this recipe though).
- Potatoes - This easy recipe doesn't require any special potatoes. Use what you've got! Red potatoes, new potatoes and waxy potatoes tend to hold their shape better and russet potatoes (baking potatoes) will get a little softer. Either type will taste great.
- Mayo and Sour Cream - You can use regular (what I've used here) or low-fat versions but stay away from fat-free sour cream or the texture of the sauce will suffer.

Substitutions + Variations
Want to change up this loaded chicken potato broccoli casserole? Try one of these substitutions for variations to customize your delicious meal.
- Cheese - Cheese is a great way to change up the flavors of this broccoli potato casserole recipe. A combination of Swiss cheese and parmesan cheese adds European flair or sub in shredded regular or jalapeno Monterey jack cheese another tasty variation.
- Vegetarian - Got a vegetarian in the family? Omit chicken and add in extra broccoli or 1-2 cups of chopped sweet potatoes. Bake as directed for a vegetarian version.
- Cheats chicken - Got leftover rotisserie chicken to use? Leftover cooked chicken works really well in this cheesy chicken bake and will cut down the cooking time by 10-15 minutes.
- Seasoning - I've used a combination of dried herbs and spices similar to ranch seasoning. You can swap 4 teaspoons of prepared ranch spice mix (reduce salt if your ranch mix is salted). Or change up the flavor profile by using 2 teaspoons of Italian seasoning. If you've used Swiss and parmesan cheese, Italian seasoning is a fun swap to make.

Step-by-Step Instructions
With just a few minutes of hands on time, you can whip up this easy casserole the entire family will love. A delicious recipe with just a handful of ingredients!
Start by preheating your oven to 375°F.

Step 1. Combine sour cream, mayonnaise, green onions, dried herbs, garlic powder, onion powder, salt, ground black pepper and 1 ½ cups of the shredded cheddar cheese. Add in crispy bacon bits if using, reserving a few for garnish at the end.

Step 2. Stir until combined.

Step 3. Add chicken, chopped potatoes and broccoli florets into the sour cream mixture.

Step 4. Stir until chicken and vegetables are coated in sauce.

Step 5. Lightly grease your casserole dish with cooking spray, olive oil or similar, then dump the chicken mixture into the prepared baking dish. Spread the ingredients evenly in the baking dish.

Step 6. Sprinkle the remaining 1 ½ cups of shredded cheddar cheese on top. Place the casserole in your preheated oven and bake for 45-50 minutes (covered with foil if making it to enjoy later, see below) until the top is browned and bubbling and the chicken is cooked through. Remove from oven and let it rest for 10 minutes. Serve while warm garnished with extra chopped green onion or the remainder of the bacon bits if you like.
Make-Ahead Instructions
If you are making loaded cheesy chicken broccoli potato casserole ahead to reheat later, cover it with aluminum foil before baking as directed. When ready to reheat, remove foil and bake at 375'F for 30 minutes.

Store Leftovers: Leftover chicken broccoli potato casserole stores well refrigerated in an airtight container for up to 4 days.

Loaded Cheesy Chicken Broccoli and Potato Casserole
Ingredients
- 1 lb chicken breasts or thighs ½" pieces
- 4 cups potatoes chopped in ½" chunks
- 4 cups broccoli florets bite size
- 2 cups sour cream
- ½ cup mayonnaise
- 1 cup green onions finely sliced
- 1 teaspoon each; dried parsley, dill, garlic powder and onion powder or equivalent ranch dressing mix
- 1 teaspoon sea salt
- 1 teaspoon black pepper
- 3 cups shredded cheddar cheese
- ¾ cup *optional: bacon bits
Instructions
- Heat the oven to 375° and lightly grease a 9" x 13" casserole dish with margarine, vegetable oil, or parchment paper.
- In a large mixing bowl combine sour cream, mayonnaise, green onions, dried herbs, garlic powder, onion powder, salt, ground black pepper and 1 ½ cups of the shredded cheddar cheese. Add in bacon bits if using, reserving a few for garnish at the end. Stir until combined.
- Add chicken, chopped potatoes, and broccoli florets and stir again, then pour the chicken mixture into the prepared baking dish and sprinkle the remaining 1 ½ cups of shredded cheese on top.
- Place the dish into the oven and bake for 45-50 minutes, until the top is browned and bubbling and the chicken is cooked through.
- Remove from oven and let it rest for 10 minutes to let it set, then serve while warm garnished with extra chopped green onion or bacon bits if you like.
