Step 3. Stir or massage the thin chicken until each piece is evenly coated. Refrigerate 30-90 minutes. Preheat your oven to 400°F (200°C).

Step 4. Line a baking sheet with parchment paper for easy cleanup. Remove chicken breasts from the marinade, letting excess drip off, and lay them in a single layer on the prepared sheet.

Step 5. Bake. Slide the pan into the hot oven and bake until an instant-read thermometer inserted into the thickest part reads 165°F (74°C), about 12-15 minutes.

Step 6. Rest & garnish. Let the chicken rest for 3-5 minutes on the pan before transferring to plates. Sprinkle with chopped parsley and/or grated Parmesan and serve while hot.

Grilling thin chicken breasts works well but they will cook much faster this way. They may be done in as little as 4-5 minutes so adjust cooking time accordingly.

Ingredients
- 1 lb thin chicken breasts or regular chicken breasts sliced horizontally
- 1 tablespoon extra virgin olive oil
- 1 teaspoon lemon zest
- 2 teaspoon lemon juice
- 1 minced garlic clove or 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- 1 teaspoon paprika
- ¾ teaspoon salt
- ½ teaspoon ground black pepper
- Option fresh herbs and grated parmesan cheese for serving
Instructions
- Combine all ingredients except chicken and optional garnishes in a large zip top bag or bowl. Add thin chicken breasts and stir or massage the marinade to cover it all. Seal or cover and refrigerate 30-90 minutes to marinate.
- Preheat oven to 400'F and line a baking sheet with parchment paper.
- Remove chicken breast pieces from the bag or bowl and place them in a single layer on the baking sheet. Place in oven and bake until the center of the chicken reaches 165'F (74°C), about 12-15 minutes.
- Remove from oven and serve while hot sprinkled with fresh chopped parsley or grated parmesan.
