Instructions
Combine all ingredients except chicken and optional garnishes in a large zip top bag or bowl. Add thin chicken breasts and stir or massage the marinade to cover it all. Seal or cover and refrigerate 30-90 minutes to marinate.
Preheat oven to 400’F and line a baking sheet with parchment paper.
Remove chicken breast pieces from the bag or bowl and place them in a single layer on the baking sheet. Place in oven and bake until the center of the chicken reaches 165’F (74°C), about 12-15 minutes.
Remove from oven and serve while hot sprinkled with fresh chopped parsley or grated parmesan.
Notes
This makes a good meal prep recipe. Cook up a batch of thin chicken to store in the fridge and use to top salads, sandwiches and pasta dishes.
