How To Clean And Season A Cast Iron Skillet
I've been cooking with cast iron pans and skillets for years and this past year, while travelling to photo shoots for my upcoming cookbook, I invested in a cast iron grill pan, too. I am in love with it. It can cook at higher temperatures than lighter, non-stick pans and retains heat wonderfully, making my grilled recipes pop with great sear marks and a good seared crust. But, with all the recipes (over 100 recipes made and shot in about 10 days!) my pans were working hard and needed a good clean.

If you have a cast iron skillet, pan or grill pan, these steps will work for that, too.
- Scrape. Once your pan has cooled down, scrape or wipe out leftover bits with a spatula or cloth. Any stubborn bits can be scrubbed off with a coarse salt scrub or chainmail scrubber.
- Wash with a gently cleanser. In fact, if your pan is well seasoned already, a rinse and wipe with hot water and a cloth may be all it needs, but if you need more, use a gentle cleanser. Castile soap or another mild soap particularly made for cast iron is the best. Whatever you do, don't put your cast iron in the dishwasher. The caustic soap, heat and length of the cycle will take a big toll on your cast iron and likely require re-seasoning after.
- Season. Once your pan is well seasoned, you don't need to do this every time, and in fact with good care, you may never need to re-season it. But if it's new or doesn't have a good non-stick coating, brush your pan lightly (a teaspoon will do) with a neutral oil that has a high smoke point like canola oil, grapeseed oil, shortening or vegetable oil. Be sure to avoid any oils that have a low smoke point such as butter, or highly flavored fats that will impart flavors to other foods like bacon fat.
- Bake and buff. If your pan is well seasoned, you can skip this step but if it's new-ish, preheat your oven to 400°F and pop the oiled up cast iron skillet into the oven for about an hour. Then turn off the heat, let it cool and then wipe any excess oil out with a cloth or paper towel.
