Baked brie is a classic appetizer at holiday parties but equally at home for family movie night. Nuts and honey, apricot jam or fried mushrooms (use truffles if you have them!) are some of my favorite toppings.

The great thing about baked brie is how versatile it is. This rich cheese pairs well with both sweet and savory foods including simple jam, jelly or garden herbs.
To make it a meal, serve it with lots of crusty bread and a crisp salad with vinaigrette. Cured meats or sausage go well, as do nuts.
It is also delicious served as part of a cheese board or charcuterie board. It can be set on a serving platter with a sliced baguette or simple water crackers or get fancy with nut or seed crackers. Thinly sliced apple or pear are good dippers as are endive spears.

How To Use Leftover Baked Brie
While you don't want to serve a half eaten, leftover wheel of brie, it's still delicious used in other ways. Once the party is over, store the leftover brie cheese in plastic wrap in the fridge for up a week and use in roasted veggie sandwiches, melts, or in this apple brie grilled cheese sandwich.
You can also do like Jacques Pepin does and make a forage fort, a mixture of all your leftover bits of cheese. Add them all to a food processor, add a splash of sherry or white wine, fresh herbs and a minced garlic clove. Process until well blended and season with salt and pepper. Serve cold, warm or melted onto toast.
Brie leftovers work well served melted over asparagus, Brussels sprouts or cooked new potatoes like you would with raclette.
Easy Baked Brie Recipe
This is the easiest baked brie recipe ever and the end result is a gooey texture and the delicious flavor of the bloomy rind of the cheese. The brie rind keeps the melted cheese contained while baking and it can be served in the baking dish it is made in as it is like a melty cheese dip once cut open. (If you dislike the rind, you can slice the top off carefully before topping and baking.)
Place a brie cheese wheel in a small baking dish (I love this Le Creuset one). Top with a dollop of your favorite jam like hot pepper jelly or apricot jam, honey or favorite topping and place in the oven to bake until it looks puffy and is melted through.
Let cool 5 minutes before serving with crackers or toasted bread and a spreading knife. You can serve it in the baking dish or use a spatula to place it on a platter.
Brie Baked In Puff Pastry aka Brie en Croûte
This is an easy recipe with simple ingredients. Feel free to add a few tablespoons of your favorite condiment or jam to the top of the creamy brie before wrapping and baking.
To make baked brie in puff pastry, start by preheating your oven to 375°F (190°C). Roll out a sheet of puff pastry dough on a floured surface until it's large enough to completely encase the brie wheel. Place the brie wheel in the center of the puff pastry and fold the edges over, sealing the cheese inside. (Or do an open pastry as shown below.)
Brush the pastry with a beaten egg (egg wash) to create a golden brown crust when baked. Transfer the wrapped brie to a baking sheet lined with parchment paper and bake for 20-25 minutes, or until the pastry is puffed and golden. Allow the baked brie to cool for a few minutes before serving, then slice into the golden puff pastry to reveal the warm, gooey cheese inside.
Baked Brie In Phyllo Dough
To prepare brie baked in phyllo pastry dough, preheat your oven to 375°F (190°C). Unwrap a package of phyllo pastry and cover gently wth a damp paper towel. Melt ¼ c butter and brush each sheet of phyllo.
Baked Brie Parcels: Lay each sheet on top of one another on a baking tray lined with a sheet of parchment paper. Cut the stack of phyllo pastry into 5 inch squares and fill with a piece of the cheese and a teaspoon of topping, then wrap up and press edges together.
Baked Brie Tarts: lace 4" squares of layered phyllo in mini cupcake tins and fill with the same fillings.
Bake the whole wheel: Place a drizzle of honey, a sprinkle of fresh thyme, and a ¼ cup of chopped walnuts on the center of the top phyllo sheet and then top with a wheel of brie.
Carefully fold the buttered phyllo sheets over the brie, ensuring it's completely covered. Flip it upside down so the folded side is on the bottom and the honey and nuts are facing up. Bake for 20-25 minutes until the phyllo is crisp and golden brown. Allow it to cool slightly before serving.
