If you love pizza night at home, this easy delicious bread machine pizza dough recipe might be your new favorite recipe. Just a few basic ingredients popped into your bread maker will (almost magically) give you smooth, stretchy dough an hour and a half later. Top it simply with cheese or your favorite pizza toppings and it will bake up into a crispy crust with a tender chew. This recipe works for thin crust pizzas, thicker pan pies, or anything in between.

Why I Love This Recipe
Set it and forget it on the dough cycle, no kneading by hand. You can even set the timer to start later in the day or early in the morning. Or, make it ahead of time and store it in the fridge for up to 4 days, before bringing back to room temperature and baking.
Roll it thin or roll it thick for different types of pizza, from a crisp, thin crust pizza to a softer thick crust pizza or anything in between.
Make ahead and store it in the fridge in an airtight container up to 4 days ahead.
Bake it in a regular oven with a hot stone, pizza pan, or baking sheet, or bake it up in a gas or wood fired pizza oven.
Recipe Ingredients
Despite the simplicity of the ingredients, the rising time and method make up a flavorful, perfect dough with great texture every time.

- Flour - I've used all purpose flour for this recipe and it works perfectly. If you choose to use another type of flour (bread flour or 00 flour), you may need to use a little more or a little less.
- Yeast - Regular, dry active yeast is all you need. I like to store mine in the fridge to keep it at it's most fresh and active. If you have packets of yeast, use 1 packet.
- Salt - While any salt will work fine, I always like to use sea salt.

Substitutions + Variations
- Flour - All-purpose gives a balanced bite. For extra chew and color, swap ½ cup to 1 cup with bread flour. If you like a nuttier flavor, replace up to ½ cup with a little whole wheat flour. Use the best flour you have on hand, both AP and bread flour make a perfect pizza crust. Fresh flour has a pleasant smell. If your flour is old and has a musty or rancid odor, toss it and get a new bag of flour.
- Yeast - Active dry yeast and instant yeast are interchangeable by volume here.
- Seasoning - Although I prefer to add my seasoning on top of the pizza, if you like it in your crust, add 1 teaspoon Italian seasoning to the dry ingredients in the bread machine.
Step-by-Step Instructions
This is a great recipe that makes perfect pizza dough every time. It will easily become a family favorite recipe for it's flavor and ease of assembly. (My daughter will often get it started after school if she wants pizza for dinner.)
Like other bread machine recipes, liquid ingredients go in first, followed by the dry ingredients.

Step 1. Add yeast and warm water to the bowl of the bread maker. Water should be warm, not hot. Aim for 100-110°F (38-43°C), if water is too hot, it can kill the yeast. For best results, let sit until it's starting to foam (bloom the yeast) about 10 minutes. If the yeast doesn't activate, toss it and start over with new yeast.

Step 2. Next add the olive oil, then the flour and salt. Close the lid.

Step 3. Select the dough or pizza dough setting and press start. Different types of bread machines vary, but most cycles run 60-90 minutes including the dough rise.

Step 4. Once the dough cycle is finished, take the dough out (be sure to take the dough paddle out at this point) and place it on a lightly floured surface. Let the dough rest for 15-20 minutes, and then your pizza dough is ready to roll! (If storing for later, place it in a greased bowl or bag, cover well and refrigerate.)

Step 5. Roll out the dough with your hands or a rolling pin and place it on a well floured pizza peel, parchment paper lined pizza pan or baking sheet. This will make two 10-12" pizzas, depending how thick you like your crust. It can also make 4-6 mini or individual pizzas.
Preheat your oven to 475-500°F (250-260°C). Top with your favorite sauce, toppings and cheese and bake until the crust cooked through, starting to brown and the cheese is bubbling, about 7-12 minutes. Cool for about 2 minutes on a rack to set the cheese before slicing and serving while hot.


Pizza Tips
For fantastic homemade pizza dough in a home oven, place a pizza stone/baking stone or heavy baking sheet on the middle rack of the oven and preheat it to it's highest temperature. This helps the crust bubble and crisp up.
Pizza doesn't need to be round. Roll it into an oval or rectangle if you like, to maximize the space on a baking sheet. (Got an Ooni? Try this high hydration pizza dough just for 900°F pizza ovens.)

Recipe FAQs
Yes, and it's even better due to a long cold ferment. Once the bread machine finishes the cycle, put the dough in a lightly oiled gallon-sized Ziploc bag or oiled bowl covered with a lid or plastic wrap and leave it in the fridge overnight. This slow, cold ferment creates way more flavor than the machine can do in 90 minutes. Remove from the fridge and bring to room temperature, then roll, top and bake.
Yes! Simply pop it into a lightly oiled zip top bag or resealable container and freeze for up to 3 months. To thaw, place the frozen dough in it's bag or container in the fridge overnight (or at room temperature for a few hours. Once thawed, uncover it and let it come to room temperature before rolling, topping and baking.
Likely it's because the gluten is too tight. After being kneaded, the dough needs a 15-30 minute rest to relax the gluten and make it easier to roll out.
