This salad of fresh, Natural Delights Medjool Dates and carrots is hearty, rich and satisfying yet still incredibly healthy. A sweet tart dressing turns creamy in seconds from pureed dates and warm spices give this a true comfort food flavor.
2Natural Delights Medjool Dates, pitted and coarsely chopped
3tablespoonOlive Oil
1tablespoonRed Wine Vinegar
4tablespoonOrange Juicefresh squeezed is most flavorful
⅛teaspoonCinnamon
⅛teaspoonCoriander
⅛teaspoonNutmeg
⅛teaspoonCayenne (Optional)
¼ teaspoonSalt and ⅛ teaspoon PepperUse salt and pepper to taste
Salad
1cNatural Delights Medjool Dates, quartered lengthwise and pits removed
1 ½ cCarrots, peeled and sliced into ⅛" coins
1cParsely, finely chopped
4cKale, coarsely chopped into large bite size pieces
¾cPecans, coarsely chopped
Instructions
Make Dressing
Add all dressing ingredients to immersion blender cup or regular blender. Process on high until it is smooth and creamy, about 1-2 minutes.
Assemble Salad
15-60 minutes before serving, toss carrots with half of dressing and let sit to soften.
Right before serving, in a large bowl toss Medjool dates, parsley and kale with carrots and remaining dressing. Arrange on a platter or individual plates and top with chopped pecans and enjoy immediately.
Notes
Make sure to use fresh dates and not dried, to achieve the creamy consistency in the dressing.Don't toss the greens with the dressing until ready to serve so they stay crisp and bright. Use any leftover creamy date dressing on grilled pork or chicken sliced over greens or on a roasted root vegetable salad.
