Zucchini Feta Salad With Hazelnuts (Courgette Salad)
A light and refreshing salad that looks and tastes like summer! Use a vegetable peeler to cut courgette (zucchini) into ribbons, thin slices or use a veggie spiralizer to make zoodles.
1LargeZucchini, cut into thin ribbons with a vegetable peeler or mandolineor 2 small courgette (zucchini)
½ cHazelnuts
½cFeta cheese, crumbled
1teaspoonLemon zest
2tablespoonLemon juice
4tablespoonExtra Virgin Olive oil
½teaspoonSalt
½ teaspoonSugar
¼teaspoonFresh Pepper
Optional: Basil, Mint or Parsley For Garnish
Instructions
In a small bowl, mix together lemon zest and juice, olive oil, salt, sugar and pepper. Whisk well and season to taste with extra salt and pepper.
Place zucchini ribbons or chunks in a large bowl. Add nuts, feta and herbs if using. Drizzle lemon dressing over top, toss gently and serve right away.
Notes
Do not toss until just before eating, this will wilt fast and while it's still delicious the next day for lunch, it won't look as pretty.
