Easiest Winter Cream of Tomato Soup
Total Time 20 minutes
Ingredients
- 2 Tbsp Olive Oil
- 1 Sweet Yellow Onion diced
- 2 Cans Tomatoes with their juice 14 oz
- 1 c Heavy Cream
- 1 tsp each Rosemary+Thyme or 1/4 c each Basil+Parsley if it's summer
- Salt and Pepper to taste
Instructions

Saute onion in olive oil until transcluscent

Add tomatoes and juice and simmer until reduced by 1/4

Add in herbs, 1 tsp salt and 1/2 tsp pepper and whiz with immersion blender until almost smooth. I like it to have a bit of texture but you can puree until smooth if desired.

Stir in heavy cream and season to taste with S+P

This is a great quick soup in the winter when only the woody herbs are still green and nothing else is growing.
