Mexican Side Striped Shrimp Cocktail
While on holiday in Cabo, I had Mexican Shrimp Cocktail (Coctel De Camarones) for the first time. It's a savory, juicy, tomato juice based (or clamato for this Canadian take) appetizer. Flavors taken from salsa but richer and sweeter. I made this with our local side striped shrimp and loaded it with veggies making this a really healthy appetizer choice.

Use It Up Fruit Salsa
Well Use-It-Up Fruit Salsa is really not Mexican at all but it does use the spice, lime and cilantro of the traditional recipe. Designed as a recipe to use up your fruit that needs using, it is delicious on grilled chicken and fish and works well in tacos or scooped up with tortilla chips too!
Sweet And Savory Rhubarb Salsa
West Coast special! Savory and a bit sweet, Rhubarb Salsa is a fun twist for spring. Crisp, tart rhubarb softens slightly with vinegar and sugar before being tossed with cilantro. This is a vibrantly colored show stopper.

Oceanwise Tuna Ceviche
Mexican Tuna Ceviche is another healthy appetizer that is one of my personal favorites. I've used frozen at sea, Oceanwise albacore tuna and cooked it in lime. A good dose of salt and herbs finishes this. Classically served with tostadas or tortillas to scoop it up, it also works well on a bowl of plain rice.

Ling Cod Fish Tacos
My family loves Fish Tacos With. My pictures aren't the best but these are my kids favorites. As I mention in the recipe, I don't always coat the fish, sometimes I simple season it and pan fry it plain.
I swear by my simple spicy mayo dip and simplest slaw. No matter what fish I use, those fillings remain the same. I sometimes use mango but sometimes use the Use-It-Up Fruit Salsa.
Fresh and Fast 5 Ingredient Guacamole
No good May 5th celebration is complete without guacamole. It's naturally vegetarian, dairy free and vegan! Mash a ripe avocado with a ¼ c shredded onion, ¼ c finely diced tomato, ½ teaspoon of salt and a generous squish of lime for a classic, clean version. Add chili flakes or hot sauce to taste if you like a spicy version.

A Perfect Margarita
No more words needed, this is my favorite Homemade Margaritas recipe. Ever. Fresh fruit juice, tequila and large ice cubes....the best. No Cinco de Mayo celebration is complete without this genius cocktail!
